Yellow mustard is a widely cultivated annual, also found wild in many parts of the world. Grown for its seeds, mustard, as fodder crop or as a green manure. The yellow flowers of the plant produce hairy seed pods, with each pod containing roughly a half dozen seeds.
The flavor of yellow mustard is much more mild than other mustard microgreen seed varieties with a strong brassica flavor with only a spectre of the spice that is present in other brassicas, such as wasabi mustard and arugula.
These seeds are harvested just prior to the pods becoming ripe and bursting. These mustards seeds range in color from beige or yellow to light brown. This contrasts with black mustards which has brown to black mustard seeds. Mustard plants grow anywhere from 12 - 32 inches tall as an annual.
They can be used whole for pickling or toasted for use in dishes. When ground and mixed with other ingredients, a paste or more standard condiment can be produced from this herb seed. Use this herb on its own or with cress as a garnish, or use to add flavor and spice to salads.
